Not all fantasies do. If they do, they're usually pretty different form Tolkien's elves and dwarves. Eragon's elves and dwarves were almost exact mirror images of Tolkien's. And it'd take me a while to explain how Eragon stole from Star Wars, so look up the articles on Anti-Shurtugal.
