Lol at people saying that it goes to a color picture after the countdown... HAHAH. The fact is, you can stare at the picture ANYWHERE during the countdown, and it will make the following picture in color to your eyes. Don't believe me? Then look at the countdown, and move your eyes away from the screen when it goes to 3 seconds. Then go back when the countdown is over...you'll see that it is all black and white even the second after the countdown finishes.
Residual imaging. What you stare at first is the color complements of the actual colors of the photo. The human brain has a "longing" for the complements of those colors, so staring back at the b&w photo shows the original colors. I do this all the time when painting; artists use this to find the complement colors of the objects (s) they are trying to draw.
Want to know why it works? Your eye has 2 light receptors, rods and cones. Cones see in color, and see in focus, but only get light from directly in front of your eyes. Rods see your peripheral vision, but do NOT see color. However, based on experience, your brain will fill in what the rods see with color in order to produce a coherent image in full color.
As you stare at the dot, the periphery is filled with the castle, and your brain fills in the yellow and green grass, clouds, and everything else based on your experience of seeing these things on a regular basis. Once you look away from the dot, at another part of the image, your cones pick up the image as black and white, and your brain knows the whole image should be black and white based on this input.

I've done these before. Basicaly, if you stare at any color for 15-20 seconds and then look at a whate screen, you'll see the oposite color of what you were stareing at. Try looking at a bunch of skittles, dont move your eyes, and then brush them away and look at a white peice of paper. Strange, huh?
